With a varied and interesting menu, using the finest of locally produced ingredients, the candidate will be working with the Head Chef and the rest of the kitchen team.
Our Apprentice will learn good working practices in all aspects of the kitchen including:
• Knife Skills
• Fish preparation
• Vegetable preparation
• Sauces and Desserts
• Portion control
• Menu planning and costings
• Food safety, Health and Hygiene
The main objective of the role is to inspire learning and the understanding of how to carry out the practical skills and functions in every section of the kitchen, providing the opportunity to experience, consider and value each section.
• Work closely with the Head Chef, training in the preparation and production of the menu.
• Participate in washing up and cleaning of the kitchen; working in a safe and hygienic manner.
• Keep up to date with each segment of the training programme and attend catering college one day a week.
The duration of the apprenticeship is 12 months for Level 1 and 12 months for Level 2.
The apprentice will work within the kitchen team being responsible for preparing lunches and dinner. The Head Chef manages the whole team. The Apprentice will be supplied with a full uniform and a set of professional Chef student knives. A high standard of personal hygiene and cleanliness must be maintained. Jewellery and nail varnish should not be worn (except for wedding rings and ear studs).
